Chicken Tortilla Soup

Enchilada Mix:  Sea Salt, Ancho Chili, Garlic, Black Pepper, Cumin, Coriander, Turmeric, Paprika, Oregano, Cloves, Allspice.

 

Ingredients:

  • 2 TBSP Enchilada Mix
  • 1 LB Chicken Breast, Boneless & Skinless
  • 2 Tomatoes, Diced or 1 Can
  • 1 Onion, Diced
  • 1 - 4 oz. Can Chipped Green Chilies
  • 1 Can Corn
  • 2 Cans Chicken Broth/Stock
  • Toppings: Crushed Tortilla Chips, Sour Cream & Shredded Cheese

 

Follow these steps:

  1. Pour all the above, excluding toppings, into crock pot.
  2. Add water to fill crock pot.
  3. Cover, cook on LOW 6-8 hours or HIGH 4-6 hours.
  4. Top with tortilla chips, cheese & sour cream before serving.
