Glendalia Culinary School and Boutique Hotel Class- Friday, October 9, 2015

Wednesday October 21st at 6:30pm, De will be teaching a class at Glendalia Culinary school and boutique hotel.  The class will be about "Infusing Vinegars and cooking with Vinegars and Oils."  The following Wednesday, October 28th at 6:30pm, another class will be taught by De about "Mulling Apple Cider, Wine, and Ale.  We hope to see you there!

Rub Club-Spice Gift Set (sort of, but better!)- Friday, September 18, 2015

In most families, there is someone we go to for a great meal.  They are the person that passes down recipes, and teaches the younger generations to carry on the cooking tradition.  For all of those ones in the family, and the aspiring cooks, the rub club subscription from Colonel De makes for a thoughtful gift.

Every quarter the person subscribed to the rub club will receive a shipment with 3 spices.  Along with these spices will be recipes they can be used in, tips on how to use them, and anything else we can find to enhance the experience with a particular spice.

You won’t just be adding additional spices to your kitchens stock, you will be improving your skills by becoming more knowledgeable of spices and how they can enhance certain dishes.  We eat several times a day, so we might as well do our best with every dish right?  That’s exactly what the rub club will do for the recipient. 

If you’re looking to learn more, the how to videos on Colonel De’s website can guide you step by step with certain recipes, and there is a great list of archived recipes.  Some of the archived recipes include Guinness pot roast, honey balsamic vinaigrette, and Saigon chicken.  Is it just me or you getting hungry too?

Spices and Seasoning for Summer Grill Outs- Wednesday, August 12, 2015

Summer time is barbecue season which means grilling up the hamburgers and hot dogs. Nothing is better than a juicy hamburger straight off the grill on a warm summer day.  Most of the time a grill out becomes an event with family and/or friends.  At Colonel De we want to help you make the most out of your grill outs with our hamburger seasonings and spice blends.

Where’s the beef” is a popular spice blend that is perfect for mixing into a burger or really any ground protein.  With it’s blend of spices including cumin, cayenne, onion and turmeric you get a great tasting burger that is packed with flavor.

Another spice blend you can put to use this summer is Colonel De’s “Holy smoke seasoning” which is a combination of spices that give your protein an intense smoky flavor.  You’ll feel like you cooked something out in the smoker for hours with this stuff!  It’s wonderful, and a great alternative to getting that delicious southern smokey flavor.

For more of a simple but delicious flavor you can try our many flavored salts such as our “garlic rosemary salt” which gives the normal salty taste a little “umph”.  Simply sprinkling on garlic rosemary flavored salt and some pepper will make please anyone who is lucky enough to be at your grill out!

Herbs Seasoning- Monday, April 13, 2015

Herbs Seasoning Blends can take meat and vegetable dishes to the next level.  Often times we find seasonings incorporating spices and salt to season and marinate our food items, but seasonings based off of or created with herbs can offer a fresh and inspiring flavor to your meals.  While each seasoning is better for certain items than others, we don’t doubt they’ll be regularly used after you try them.

A well-recognized herb based seasoning is Italian seasoning.  Our take on this classic incorporates basil, rosemary, garlic, sage, thyme, oregano, and majoram that can be used for pretty much any purpose!  Along with its versatility, it’s nutritionist approved!  We recommend using this blend to bring an aromatic burst of flavor to tomato sauce, or your next chicken dish.

We also put our own twist on another classic with our poultry seasoning. This mixture of herbs is a staple in southern cooking.  Ours mixes parsley, rosemary, celery seed, sage, savory, marjoram, black pepper, and onion granules.  Are you hungry yet?!  Add this to chicken, turkey, or a casserole to bring it to life.  You can feel good about this one too, because it’s also nutritionist approved!

Last but not least we have our minty meat herbs seasoning.  This blend of rosemary, mint, savory, thyme, marjoram, and parsley enhances any meat, and works exceptionally well with lamb.  Yet again another nutritionist approved seasoning here, and something that can really add some depth to your cupboard.
